If dairy isnt a problem for you, use dairy milk of your choice in place of the Rice Dream I have listed. You can also use a soy or nut milk, if rice and dairy are both a problem for you. Original Rice Dream has a very minute amount of gluten from barley, approx .002%, which doesnt seem to bother some Celiacs. Be your own judge here. (I know a number of celiacs who seem to use Original Rice Dream with no problems. My husband is one of them. But, we do not use the other flavors of Rice Dream.)
Ingredients:
1-1/3 cups cane sugar
1/2 cup corn starch (or 1/2 cup arrowroot starch)
8 Tablespoons unsweetened Hersheys cocoa
1/4 teaspoon sea salt
3-1/2 cups Rice Dream Original* Beverage
1 stick of Lactose Free GF Margarine (Hains) cut in 8 pieces.
1 teaspoon GF vanilla
3/4 cup Ghirardelli Semi Sweet Chocolate Chips (GF)
In a large saucepan, mix together sugar, arrowroot, cocoa and salt, until evenly mixed. Add 3-1/2 cups of Rice Dream. Place over medium to low heat, and stir constantly until mixture comes to a boil. Continue stirring and cook for 1 minute, or until thickened. Turn off heat. Add butter pieces, and stir briskly until butter is incorporated into the pudding. A wisk works best for this. Add GF vanilla and chocolate chips, and stir until chocolate chips are melted, and pudding is smooth. Pour into serving dishes and chill until cool. It can be served warm.... we love it that way!
This pudding is rich and thick and fudgey.... perfect for all of us chocoholics!! :) ENJOY!
