Gettysburgmary's Stuffing
Submitted by Gettysburgmary I have a great stuffing recipe which I will share. I usually serve this with a pork roast or a beef roast, depending on my mood. Ingredients: 2 cups celery (chopped fine) Cut up the vegetables/apples and fry them together in butter. (I usually get the help of one of my helpful sons too stir the while I chop. Once everything is soft and lightly browned put the mixture off to the side. Now, tear up the 4- 5 loaves of Italian bread and place in large bowl. Add 2-3 eggs and one package of Jimmy Deans pork sausage (or zesty sausage is my husband's favorite) to the bread pieces. Mix the sausage, bread and eggs together. Once this is mixed, add the cooked vegetable mixture to it and add a good sprinkling of sage. I get in their with my hands and really mix and squeeze it good! Once its totally mixed, put it into a large cake pan or one of those tin foil disposable jobbies. Spread it out good and then poke holes along the top of the stuffing mixture. Take an orange and grate the peel over the top of the stuffing mixture and then pour a small can of chicken broth over the whole thing. Bake it in the oven for about 30-45 minutes at 350º Its a lot of work, but its delicious. |
